Old-fashioned Oatmeal Pancakes

Description:
These hearty pancakes have a chewy texture from the oatmeal. With Maple Syrup they are almost like Oatmeal cookies!!

Ingredients:
3 c. oats (regular)
3 c. buttermilk
3 eggs
1/3 c. melted margarine
3/4 c. all putpose flour
3 t. granulated white sugar
1.5 t. baking soda
1.5 t. baking powder
3/4 t. cinnamon
1/4 t. salt

Directions:
1.In bowl, combine oats and buttermilk; stir to blend well. Cover and refrigerate until next day.
2.Just before cooking, add eggs, margarine, stir just to blend.
3.In another bowl, stir together flour, sugar, baking powder and soda, cinnamon and salt. Add to oat mixture, stir just till moistened. If batter seems too thick, add more buttermilk.
4. Preheat a griddle, grease lightly. Spoon batter, about 1/4 cup for each cake onto griddle, spread out to about 3-4" circle. Cook until tops are bubbly and appear dry. Turn and cook other sides until browned.
5. Serve warm with maple syrup or other fruit syrups, raspberry is particularly good.
