Blueberry Muffins

It wouldn't be breakfast in Maine without them!

1 egg
1 c. milk
1/4 c. oil
2 c. all purpose flour
1/4 c. granulated white sugar
3 t. baking powder
1/2 t. salt
1 c. blueberries
Cinnamon Sugar Mixture

1.In a 2 cup liquid measuring cup, combine the milk, oil and eggs.

2. In a separate bowl sift together the dry ingredients. Add blueberries so they are mixed well in the flour mixture.

3. Stir in the liquid ingredients until just moistened.

4. Spoon batter into well greased muffin cups, sprinkle cinnamon sugar mixture on top. Bake 400 degrees for approximately 20 minutes, check after 15 minutes to avoid overcooking.
