Sauteed Apples & Nuts
Description:
Warm Fruit topping for French toast, waffles or custards. Ingredients: 1/2c. sliced Almonds 5T. Butter 2c/ 1/4 in. bread cubes 1/2t. nutmeg 1/2c. golden raisins 3 medium apples, cored, peeled and sliced 1/4c. granulated white sugar 1T. lemon juice 1/2t. cinnamon Directions: 1. Toast almonds in fry pan over medium heat. Stir and watch carefully as they burn easily. Pour into a bowl and set aside. 2.In same fry pan, melt 1 tbl butter, stir in nutmeg then add bread cubes. Cook and stir until the bread cubes are browned and toasted, about 10 minutes. Pour into bowl with almonds. At this point you can cover this tightly and let stand overnight. 3. On low heat melt 1 tbl butter and stir in raisins. Cook gently until the raisins are puffed. Add to almond, bread mix. 4.Melt remaining 3 tbl butter, add sugar, lemon juice and cinnamon, stir together and then add apple slices. Cook turning carefully with a heat proof spatula until apples are glazed and soft, aboout 15 minutes - the exact time will depend on how firm the apples were. 5. Pour almond mixture into the pan with apples, mix well and serve hot. Spoon some over warm custards, french toast, or waffles.
