Hearty Breakfast Bake
Description:
A hearty egg dish baked with crispy bacon, cheeses & potatoes... yummy & filling! Ingredients: 1 lb. bacon 6 lightly beaten eggs 4 c. shredded hash browns (premade frozen) 2 c. shredded Cheddar cheese 1.5 c. cottage cheese 1/2 t. salt 1/4 t. pepper 1/2 t. dill weed 1/4 t. paprika Directions: 1.Measure out the hash browns and let them sit so they begin to thaw. 2.Remove bacon from package and dice. In a large skillet cook the diced bacon until it is crisp, drain. It is easier if you cook the bacon the day before, then the morning preparation is very quick. 3. In a bowl, combine the remaining ingredients, stir in the bacon. Transfer to a greased 9x13 baking dish. 4.Preheat oven to 350 degrees. Bake uncovered 35 - 40 minutes or until set and bubbly. Best to check after 30 minutes. 5. Let stand 5-10 minutes before cutting. Cut into meal size servings and garnish with parsley or cut into bite size servings for a breakfast buffet. 6.You can also substitute sliced cooked sausage or diced ham for the bacon. Chopped onion can be cooked with the diced bacon if desired. Try other favorite cheeses instead of cheddar.
