Maine Blueberry Cornmeal Pancakes

A wonderful combination of cornmeal texture with the sweetness of Maine Blueberries.

2 c. sifted all purpose flour
2 c. cornmeal
2 T. baking powder
4 T. granulated white sugar
dash of salt
1.5 c. Blueberries
2.5 c. milk
2 eggs
1.4 c. oil

1.Sift dry ingredients together. Add blueberries to dry ingredients to prevent clumping of berries in batter.

2. Mix milk, oil, eggs and add to dry ingredients. Mix well.

3.Pour about 1/4 cup of batter on preheated griddle. Cook until bubbles form and lightly browned on the bottom, then flip pancakes over continue cooking.

4.Serve warm with warm maple syrup.
