Bacon-filled Cherry Tomatoes
Description:
Great side dish for quiche or an egg dish
Ingredients:
1 lb. crumbled, crisp bacon 1/4 cup chopped scallions 2 Tablespoons chopped parsley 2 tablespoons grated parmesan cheese 1/4 cup mayonnaise 1/4 cup sour cream 36 cherry tomatoes
Directions:
In a bowl, combine first 6 ingredients; blend well. Remove stems from tomatoes and hollow out with a melon baller. Fill tomatoes with mixture. Refrigerate several hours before serving.
