Caramel-apple Muffins With Caramel Sauce

May be served for breakfast with or without the caramel sauce or for an evening desert with caramel sauce and a scoop of vanilla ice cream. You can make the muffins the day before and store in a zip lock bag. Just pop ‘em in the microwave to heat up. Ingredients: 12 to 14 small apples 2 - Cups sugar 1- Cup vegetable oil 3 - Eggs (beaten) 2 – Teaspoon vanilla 3 – Cups flour 1 1/2 - Teaspoon of cinnamon 1/2 - Teaspoon nutmeg 1- Teaspoon baking soda 1/2 - Teaspoon salt 2 1/2 - Cups chopped pecans (optional) Quick Caramel Topping 50 - Soft caramel chews 2/3 - Cups of cream or 1/2 and 1/2 cream. Put cream and caramels in a microwavable dish. Put in the microwave and cook until smooth and creamy. Directions: Peel, core and 4 cut apples into 24 rings (about 1/4 inch thick). Sauté apple rings in a lightly greased skillet 1 to 2 minutes until both sides are a very light brown. Place one apple ring in the bottom of a greased muffin tin cup. Peel and finely chop enough remain apples to make three cups. Set aside. Stir together sugar, oil, eggs and vanilla in a large bowl. Add flour, spices, baking soda and salt. Mix until just blended. Add chopped apples and 1 cup of nuts (optional), folding into mixture. Mixture will be very stiff. Spoon batter evenly over apple rings in muffin tins, filling cups about 2/3 full. Bake at 350 degrees for 25 to 30 minutes or until toothpick inserted into middle comes out clean. Remove muffins from tins and cool apple rings up, on wire rack. Press the handle of a wooden spoon gently into the center of each apple ring, forming a 1 inch deep indentation in the muffins. Spoon warm *Caramel Sauce over muffins filling the indentations and drizzling over the sides.
