Coconut Icebox Cake

Description:
I do not remember where I found this recipe but I have had it for about 30 years. A very good, cool and creamy cake. Our guests at Grandma's Cottage B&B really enjoy this cake with a cup of coffee or hot tea.

Ingredients:
1 Package yellow cake mix
1 1/2 Cups of milk
1/2 Cup Sugar
2 Cups flaked coconut
1 Container 8oz. Cool whip topping
Crushed pineapple and mandarin oranges to garnish

Directions:
Prepare cake mix as directed, baking in a sheet cake pan. Let cake cool for 15 minutes then punch large holes, using a large fork or ice pick into the cake.
Mix milk, sugar and 1/2 cup coconut in saucepan. Bring to a boil. Reduce heat and simmer for 1 minute. Spoon hot mixture over warm cake spreading out coconut evenly over cake. Let cake sit until cool
Stir 1/2 cup of coconut into whipped topping. Spread over cool cake. Sprinkle remaining coconut over whipped topping. Cover and refrigerate for at least 6 hrs. When you serve add drained crushed pineapple and mandarin oranges for garnish
* This cake must be kept refrigrated.
