Our guest, Ken Bowling, sent the following recipe to us. It is not only succulent but also easy to make. Ingredients: 1 large whole brisket, well trimmed 1 jar of your favorite BBQ sauce 1 large onion minced 2 cloves chopped garlic 2 tsp current jelly 3 tps salt 2 tsp black pepper Cooking spray Directions: Preheat oven to 300 degrees. Warm BBQ sauce on low heat. Blend in the onion, garlic, current jelly, salt, and pepper. Wrap brisket in heavy-duty foil, sprayed with Pam, place in a large baking pan. Pour sauce over the brisket, fold and crimp the foil to seal well. Bake 6 hours. Remove brisket to a warm platter, pour off the juice and remove as much fat as possible.
